The organization was founded in 1977 as a community group with the goal of bringing "great choral masterpieces" to as many people as possible on the Eastern Shore. Performances have included works of J. S. Bach, Handel, Haydn, Vivaldi, Mozart, Kodaly, Britten, Orff, Poulenc, Verdi, Rutter and many others. Music styles have ranged from opera to the stage.

Easton Choral Arts Society concerts have been held in a variety of places. In addition to Easton, performances have been held in Cambridge, Salisbury, Oxford, St. Michaels and abroad. The first overseas concert tour, along with members of the Bethesda United Methodist Church in Salisbury, and known as "The Chesapeake Chorale" took place in June of 1996. It included concerts in England and Wales. The summer of 1998 found the "Chesapeake Chorale" on a 4-city concert tour of France. Northern Italy was toured in June of 2001. In the summer of 2004, the group visited and performed in Germany and Austria. June of 2006 found the group singing in Spain.
